Mediterranean Baked Zucchini with Peppers & Onion

3 green zucchini, cubed

1 cup chopped bell peppers (red, yellow, green)

1 medium sized white onion, chopped

2 garlic cloves, chopped finely

1 teaspoon oregano

1 teaspoon kosher salt

1 teaspoon black pepper

Olive oil (drizzled over the top)

Juice from 1/2 a lemon


1/2 cup crumbled feta cheese

2 cups cooked orzo


Mix vegetables together. Spread in a casserole dish. Then, sprinkle with seasoning, drizzle olive oil over the top, and mix well. Place in a 350 degree oven until vegetables are cooked. Add lemon juice after cooking. Optional: add 1/2 cup crumbled feta and 2 cups of cooked orzo.
